1.  The product we know today has been a sauce for several centuries. But it did not always have tomatoes. Several centuries ago it contained fish brine, herbs, and spices. Sailors probably brought the sauce to Europe where it was made with locally available ingredients including the juice of mushrooms and walnuts. At some unknown point the juice of tomatoes was included. During the 18th and 19th centuries ketchup was a generic term for sauces having only one common ingredient -- vinegar. The word is first recorded in English in 1690 in the form catchup. In 1711 it became known as ketchup. In 1730 the form catsup came into use. All three spelling variants remain in use.
